Grilling for the July 4th holiday? The North Central Texas Council of Governments’ Air North Texas program recommends using a portable, reusable charcoal chimney to heat the coals, available for around $15 at most hardware stores. It’s placed on the grill bed and avoids the use of petroleum-based lighter fluid, which releases toxins into the air and sometimes causes grilled food to have an unpleasant taste. Air North Texas also recommends the use of natural charcoal products, or ones that are made with 100 percent hardwood and contain no coal, limestone or petroleum products.
